This
product is a combination of virgin extra olive oil and merkén.
Merkén (merkeñ in Mapudungun) is an aromatic seasoning
used by the Mapuche people.
It has a exquisite, spicy and lightly smoky flavor and is prepared
from dried and smoked ¨Cacho de Cabra¨(a special red pepper
variety), which is grounded together with roasted coriander seeds
and salt.
It has a red dust aspect with small reddish particles of different
tonalities.
Merken gives to the oil an exquisite spicy-smoked flavor and a unique
seal of our ethnic roots, thus it has been slowly adopted in the
Chilean kitchen.

How
to consume.
This wonderful oil can be use in diverse preparations like:
• Direct dressing of great variety of plates.
• As an ingredient in modern creations with tuna fish, lamb,
pig or duck
• Seafood or fish, including spider crab.
• Meat recipes, empanadas, pasta and different types of mashed
vegetables.
• Dishes of marinated raw fish and tartars
• Cow and goat cheeses marinated with this oil.
• Roasted potatoes and steamed vegetables.
